Leftover Corn Chowder

This leftover corn recipe starts with a corn base and can be adjusted with whatever leftovers you have in your fridge or freezer, your favorite spices, and custom garnishes. I can't wait to see how you make this recipe yourself!
Heat the butter in a saucepan over low heat until melted. Reduce the heat to medium, add the onion and salt and cook for about 5 minutes until the onions are translucent.

Ingredients

1 tablespoon butter

1 large yellow onion

1 teaspoon kosher salt

2 slices bacon, chopped

1/2 red bell pepper

2 stalks celery

2 cloves garlic

2 chipotle peppers in adobo sauce

1 (16 ounce) bag frozen corn

4 cups chicken stock

3/4 cup heavy whipping cream

1 1/2 cups leftover cooked chicken

1 tablespoon chopped cilantro for other

Directions

Step 1

Heat the butter in a saucepan over low heat until melted. Reduce the heat to medium, add the onion and salt and cook for about 5 minutes until the onions are translucent.
Step 2
Mix bacon, red pepper, celery and garlic together. Cook, stirring, until bacon is crisp, about 5 minutes.
Step 3
Add the chipotle pepper, corn and chicken stock to the soup pot. Increase heat to medium and simmer for 20 minutes.
Step 4
Stir in cream and chicken. Cook until heated through, about 5 minutes. Pour into a bowl and garnish with cilantro.

Cook’s Note
To customize this recipe, add leftover protein in step 4, such as steak, pork, carnitas, ground turkey, tofu, beans, or chickpeas. Add leftover cooked starches such as baked potatoes, rice, and pasta. Chop and add remaining cooked vegetables such as asparagus, broccoli, tomatoes, carrots and zucchini. Choose seasonings such as oregano, paprika, white pepper, cumin and bay leaves. Finally, pour into bowls and garnish with whatever you have in the fridge or pantry, such as parsley, sunflower seeds, pine nuts, sour cream and grated cheese. enjoy!
